Bharwan Baingan or stuffed aubergines are a popular side for an Indian meal. There are different versions of it but the basic principle is to make a spice mix (cumin, chilli, cloves, coriander seed etc) with an oil seed/nut base like peanuts, sesame or coconut and stuff the uncooked aubergines by cutting a deep cross in each aubergine. The stalks are left on to hold the aubergines together and then they are pan fried with another set of spices (mustard, turmeric, green chilli, green coriander).
