This is a spicy chicken dish done with three kinds of heat – red chilli, green chilli and black pepper. Turmeric is an important spice here adding not just colour but that unmistakable taste too. Finished off with curry leaves and coriander. Often, the tastiest food isn’t the prettiest and I’ve started noticing this more and more. As chefs and restaurants become more fixated on the visual because of this Instagram world we live in, taste seems to be a secondary concern. The food I serve puts taste first and it can sometimes look quite ordinary! Was it Jay Rayner who said that ugly food is often the most delicious?
