Borscht inspired soup/stew for dinner tonight as we had loads of beetroots. I made it with pork mince as that’s the only meat I had but boy was it delicious! I didn’t expect it to taste so nice. Here’s the recipe in case anyone wants to make it.
3 large beets, 1 potato, 1/2 tin tomatoes, 1 T vinegar, 1 T sugar, 1 onion, 2 cloves garlic, 4 bay leaves. 500g pork mince, butter, oil, pepper, dill, parsley, yoghurt.
Peel, dice and Cook the potatoes and beets with tomatoes, vinegar and sugar in a little water until tender. In a separate pan fry the garlic and bay leaves in a knob of butter, add chopped onion and fry until lightly browned. Add pork and fry for 10 min. Combine the cooked beets and spuds with the pork in a large pot. Add water to desired consistency. Add seasoning and herbs.
