KOLHAPURI GOAT CURRY

Turkey Kababs

I love a kabab or two with my roti or naan. Add salad and you have a complete meal. Minced turkey breast works really well with this recipe because it does not have an overpowering flavour of its own.  The added advantage is that turkey is lean and makes a healthier alternative to chicken or lamb.

Serves 4

Cooking Time 30 min

You will need:

  • 500 g minced turkey breast
  • 2 fat cloves of garlic
  • 1 inch piece of root ginger
  • 1-2 hot green chillies
  • 3 tbs single cream
  • 1 small lime
  • 1 tsp garam masala
  • Salt
  • Oil for shallow frying

Method:

Grind the garlic, ginger, salt and chillies in a pestle and mortar or any other device that will yield a coarse paste.  Add the juice of the lime and the garam masala to this paste and mix thoroughly with the minced turkey.  Let this marinate for about 10 min.  Now make small patties on the palm of your hand – they should be 5-6 cm in diameter and about 1.5 cm thick.  Shallow fry these in a frying pan on medium heat in small batches giving them about 4 minutes on each side until they are golden on the outside.  You should end up with 15-20 kababs.  Serve with roti or naan and a bit of salad on the side.
