Today’s thali – Red lentil dal (recipe on my website- links below); freshly made wholemeal organic soft rotis; courgette sabzi and turmeric and chilli pickle (recipe on website). This meal is completely vegan and you really wouldn’t want to supplement with any animal products other than perhaps a dollop or ghee or homemade butter. It took me less than half an hour to make this and its perfect for a quick family meal. Living in the UK has meant that I have had to innovate with vegetables – courgettes are not something I grew up eating but they do lend themselves to a sabzi very well.
