Batch processing fresh ginger for freezing. Managed to get a supply so stocking up properly.
Method:
Scrape off the skin with a sharp knife held perpendicular to the surface. Crush/grind it in a food processor. It doesn’t matter if it’s fine – the main thing is not to lose the juice when you freeze it. Ideally put it into an ice tray and freeze into cubes. Or put a 1” layer on a tray and separate into cubes with a spatula and put the whole tray in the freezer. Scrape off the cubes and transfer to a freezer bag or box.
