#recipeoftheday finally got round to writing this up after doing the cook along with @radikalkitchen last Saturday. It’s on my website now link in profile. These are potato cakes with a spicy green pea filling. I often make them at home and for my Supperclubs. This is a dish loaded with memories for me – trips to the local chaatwallh and eating garmagaram hot hot Tikkis as they came of the huge tawa. They would put them in a leaf bowl – smash it lightly and dress with tamarind and mint chutneys. Those were the days.
It’s amazing how hard it is to quantify things when you’ve never measured ingredients. For us, cooking is always a matter of “andaaz” ie judging how much of something you need to add by developing a feel for the dish. But I am getting used to it so expect to see many more!
