Very excited to announce my forthcoming collaboration with the amazing Radhika of RadikalKitchen. We are going to do a chatty cook along, reminiscing about growing up in Delhi and cooking one of our favourite streetfood dishes Aloo Ki Tkki!!! ´╗┐Here is what you will need

2 large potatoes boiled in their skins, cooled and peeled
2 tbsp corn starch or another binding agent like a soaked and squeezed slice of bread
1/2 cup green peas or chickpeas or any beans
1/2 tsp chilli powder
And the following optional spices – just use what you gave, even curry powder
1/2 tsp cumin powder
1/2 fennel powder
1/2 tsp amchur
1/2 tsp salt
Handful chopped coriander leaves
2 green chillies chopped.
Oil for shallow frying
Sauces – ideally tamarind sauce and mint and chilli sauce but you can substitute these with ketchup, HP sauce or Worcester sauce.
